Creamy Overnight Oats with Roadside Berries Recipe

When summer starts to end and autumn is in the air, the blackberries start to ripen. You can find them all over, and we just happened to pull up at a beach that had a bush right next to our RV. I love being able to forage along my journey and make some memories.

INGREDIENTS

  • 1 cup milk (your choice of dairy, almond, cashew or coconut milk), plus extra if needed
  • 1/2 cup rolled oats
  • 1 tablespoon chia seeds
  • 1/2 cup coconut yogurt
  • Sliced apple with a squeeze of lemon
  • Your choice of berries (blackberries, strawberries, etc.)
  • Mixed seeds and nuts

COOKING TOOLS

  • 2 Empty jars
  • 1 Medium mixing bowl

METHOD

Place the milk, oats and chia seeds in a jar or container and give them a good stir. Refrigerate overnight or for at least 2 hours.

In the morning, add more milk if needed to achieve your preferred consistency. Transfer to a bowl with the coconut yogurt and top with apple, berries, and your choice of seeds or nuts for a bit of crunch.
